This Vegan Eggnog Layered Cake is easy and fun to make for the holidays and paired with a vegan eggnog frosting. It is not overly sweet and simple to make.
I was one of those kids when I was little who believed in Santa Claus and reindeers even though my parents would tell me they are not real. We have a fireplace in our house, but we never used it because my parents were afraid we would get hurt with the fire (although I also think they don’t know how to use it so never tried). So the fireplace is always covered with a screen, dust piling up more and more. Whenever Christmas is approaching, I remember always standing by it every night really wondering if Santa would come and give me gifts if I was good.
We don’t do anything big for Christmas, but having watched all the Christmas movies, I always bake some cookies and maybe a cake every year and put it out by the fireplace at night before bed just in case Santa and his reindeers do come. Even though the cookies and cake were never gone, I was never really disappointed, being happy to be open gifts that day that my parents and relatives got for us. And truly, I think I was a bit naughty when I was a kid, always pranking my siblings whenever I can.

How do you make this cake?
Preheat the oven to 350 degrees F. Gather and line 3 four-inch cake pans. Add the vegan eggnog and apple cider vinegar to a bowl. Stir and let it sit for 5 minutes.
In a separate bowl, add the flour, cane sugar, brown sugar, baking powder, baking soda, nutmeg, cinnamon, and pinch of salt. Mix until well combined. Add the eggnog mixture, apple sauce, and vanilla extract into the flour mixture. Mix until combined, being careful not to overmix.
Divide the mixture evenly into the 3 cake pans. Bake for 40-45 minutes. Once ready, remove from the oven and let cool completely before frosting.

Ingredients
Cake
-310g all-purpose flour, sifted (can sub for 1:1 gluten-free flour)
-275ml (1¼ cup) vegan eggnog
-125ml (½ cup) unsweetened, apple sauce
-100g (½ cup) organic cane sugar
-100g (½ cup) light brown sugar
-15ml (1 tbsp) apple cider vinegar
-1 tsp pure vanilla extract
-1 tsp baking powder
-½ tsp baking soda
-¾ tsp ground nutmeg
-½ tsp ground cinnamon
-pinch of salt
Frosting
-230g (1 cup or 2 sticks) unsalted, vegan butter
-85ml (½ cup) vegan eggnog
-⅓ cup all-purpose flour (or 1:1 gluten-free flour)
-1 tsp pure vanilla extract
-¼ tsp ground nutmeg
-¼ tsp ground cinnamon
Instructions
- Preheat the oven to 350 degrees F. Line 3 four-inch cake pans with parchment paper or lightly spray with oil.
- Add the vegan eggnog and apple cider vinegar to a bowl. Stir and let it sit for 5 minutes.
- In a separate bowl, add the flour, cane sugar, brown sugar, baking powder, baking soda, nutmeg, cinnamon, and pinch of salt. Mix until well combined.
- Add the eggnog mixture, apple sauce, and vanilla extract into the flour mixture. Mix until combined, being careful not to overmix.
- Divide the mixture evenly into the 3 cake pans. (Mine came out to be about 290g each.)
- Bake for 40-45 minutes or until toothpick comes out clean. Once ready, remove from the oven and let cool completely before frosting.
- To make the eggnog frosting, add the vegan eggnog into a saucepan. Sift the flour into the eggnog. Stir to combine. Turn the heat to low and allow it to thicken, stirring frequently. Once it thickens, transfer to a bowl and allow it to cool completely.
- Add the butter into the bowl and beat until the butter is fluffy. Add in the vanilla extract, ground nutmeg and cinnamon spice. Beat again until smooth and well-combined. Add in the flour mixture and beat until smooth.
- Frost the cake as you like. Allow it to sit in the fridge for 10-15 minutes before serving. Enjoy!
