I cannot believe it is the last month of November. With December right around the corner and Christmas and New Year’s soon after, it’s never too early to start planning holiday recipes/menu ideas. Not eaten often, cranberry is the perfect festive fruit. Not only are they good as cranberry sauce and as dried fruits for dishes, they are perfect for dessert too.


I decided to make an easy recipe using cranberries and made these No-Bake Cranberry Tartlets. Feel free to double or even triple this recipe for more servings! Here are all you will need to make these tartlets:

-Medjool dates pitted
-cinnamon
-fresh cranberries
-coconut oil
-plant-based milk
-maple syrup

Description
These No-Bake Cranberry Tartlets are just the festive treat to have for the holidays. They are the perfect amount of sweetness and creamy as well. These tartlets are vegan, gluten-free, and refined sugar-free.
Ingredients
Crust
-¾ cup walnuts
-5 large Medjool dates, pitted
-1 tsp cinnamon
Filling
-¾ cup raw cashews, soaked overnight
-⅔ cup fresh cranberries
-⅓ cup coconut oil, melted
-3 tbsp unsweetened almond milk*
-⅓ cup + 1 tbsp maple syrup
-½ tsp cinnamon
Instructions
- Soak medjool dates in hot water for 5 minutes or until softened.
- In a blender or food processor, combine all the ingredients for the crust together. Blend until a crumb mixture forms. Divide into 3 tartlet pans, pressing on sides to ensure they are evenly distributed. Place in freezer.
- In the same blender, combine all the ingredients together and blend until a creamy mixture forms.
- Evenly divide into tartlet pans. Let sit in the freezer for 2-3 hours until set.
- Remove tartlet pans. Let sit in counter at room temperature for 5 minutes. Top with more cranberries if desired. Enjoy!
