No-Bake Chocolate Walnut Coconut Bars (Vegan, Gluten-Free, Refined Sugar-Free)

Description

These Chocolate Walnut Coconut Bars are packed with coconut flour. They are not overly sweet and has a perfect balance of chocolate and coconut. They are vegan, gluten-free, and refined sugar-free.


Ingredients

Base
-1 ¼ cup walnuts
-⅓ cup cacao powder
-5 tbsp maple syrup
-1 ½ tbsp coconut oil, melted
-½ tsp cinnamon
-¼ tsp cardamom

Coconut Layer
-2 ½ cup unsweetened shredded coconut
-2 tbsp coconut oil, melted
-½ cup maple syrup
-½ tsp cinnamon
-¼ cup unsweetened almond milk*

Chocolate Layer
-⅔ cup vegan dark chocolate chips
-2 tbsp coconut oil

Toppings
-½ cup walnuts, chopped


Instructions

  1. Line a 7×7 pan with parchment paper.
  2. Add all the ingredients for the base in a blender or food processor and blend until a crumbly mixture forms. Pour into pan and press evenly on all sides. Place in freezer for 10 minutes.
  3. Combine all the ingredients for the coconut layer. Pour into pan. Leave in freezer.
  4. Add the chocolate chips and oil in a glass bowl. Microwave in 30 second intervals until all the chocolate has melted. Pour into top of coconut layer. Add chopped walnuts to the top. Leave in the freezer for 2 hours.
  5. Take out of freezer. Cut into 12 slices (more in you want smaller pieces). Enjoy!
