Description
These Heart-Shaped Vegan Almond Cookie Sandwiches are the perfect bite-size treats to have and serve as a gift. They are vegan, gluten-free and oil-free.
Ingredients
Cookies
-1 ½ cup almond flour
-½ cup + 1 tbsp tapioca flour
-2 tbsp arrowroot flour
-2 tbsp creamy, unsalted peanut butter
-2 tbsp tahini
-⅓ cup unsweetened applesauce
-3 tbsp maple syrup
-½ tsp baking soda
-½ tsp baking powder
Filling
-½ cup (or 1 stick) vegan butter
-1 cup organic powdered sugar
-½ tsp vanilla extract
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet pan with parchment paper or a Silpat.
- In a large bowl, combine all the flour, baking soda and baking powder together.
- In a separate bowl, combine the peanut butter, tahini, applesauce, and maple syrup together until smooth. Slowly add in the flour mixture and mix.
- Lightly dust a clean surface with tapioca flour. Roll the dough about 1/4th inch in thickness. Using a heart-shaped cookie cutter (or you can use any other shape), cut the cookies out. Repeat the step until all the cookie dough has been used.
- Bake the cookies for 8 minutes, being careful not to burn them.
- While the cookies are baking, make the filling. Mix together the vegan butter, powdered sugar and vanilla extract until smooth. Option to add beet coloring for colors.
- Once the cookies are ready, let it cool completely. Scoop about ½ tsp of the filling and add it to one side of a cookie. Top the other side of the cookie with another cookie. Repeat step until all cookies are made.
- Serve and enjoy! Keep leftovers in fridge until ready to be eaten.
