These Vegan Chocolate Truffles are the perfect snacks to have on hand. They require only 7 ingredients to make and are not only vegan, but also gluten-free, oil-free and refined sugar-free.
1 cup vegan chocolate chips
¼ + 1 tsp unsweetened cashew milk (or milk of choice)
3 tbsp maple syrup
⅓ cup unsalted, creamy peanut butter
½ cup pecans, chopped
½ cup walnuts, chopped
Pinch of salt
- Melted the chocolate chips with the milk in the microwave in 30 second intervals until completely melted. Stir the chocolate chips after each interval, scraping on the sides.
- Add in maple syrup, peanut butter, and salt. Mix together until well combined. Place in fridge to chill for 30 minutes.
- Combine the pecans and walnuts together.
- Roll the batter into 1 ½ tbsp balls. Roll into nut mixture. Repeat step. Enjoy!
