With the coronavirus going on, my heart goes out to everyone. We are all affected by the virus in some ways and now, more than ever, it is important for us to show more love and kindness to everyone. Some are unable to go to grocery stores to purchase groceries and some are isolated away from family members. A lot of us want nothing more than some simple recipes to make that we can find in our pantry.
I will be making simple meals, desserts and other baked goods that require minimal ingredients throughout this period. Sweets always make my day better and I hope through this you will have something to brighten your day. One of the first simple recipes is this Easy Vegan Kiwi Coconut Rice Pudding that is gluten-free and refined sugar-free as well. You only need 6 ingredients and you can substitute anything to make them.
Here is what you will need (substitutions suggested)
-kiwis (you can substitute for any other fruits you have or omit)
-jasmine rice (or any other white rice)
-coconut milk (you can use any other plantbased milk)
-ground cinnamon (can omit)
-vanilla extract (can omit)
-maple syrup (use coconut sugar or any other sweetener of choice)

These Kiwi Coconut Rice Puddings are easy to make and requires only 6 ingredients. They are tasty and makes the perfect breakfast or snack to have!
-2 large kiwis, peeled
-½ cup jasmine rice
-2 cups coconut milk
-½ tsp ground cinnamon
-1 tsp vanilla extract
-2 tbsp maple syrup
- Add all the ingredients except for the kiwis into a pot and simmer until the rice is cooked and soft. Add a little more milk if needed for creamy texture. Once ready, allow to cool.
- Mash the kiwis or add to the blender and blend.
- Divide the kiwis into 2 jars and top with the coconut rice. Add desired toppings and place in the fridge until ready to eat. Enjoy!
