Easy Vegan Gingerbread Cookies (gluten-free)

These Vegan Gingerbread Cookies are soft on the inside and slightly crunchy on the outside. They are very easy to make and you can form them into whatever shape you want. They are the perfect festive cookies.


-1 ⅓ cup gluten-free flour
-3 tbsp molasses
-3 tbsp coconut oil, melted
-5 tbsp dairy-free milk (I used unsweetened cashew milk)
-1 tsp cinnamon
-½ tsp cardamom
-½ tsp ground ginger
-1 cup organic powdered sugar
-½ tsp baking powder


  1. In a bowl, combine flour, cinnamon, cardamom, ginger, powdered sugar, and baking powder together.
  2. In a separate bowl, combine molasses, coconut oil, and milk together. Slowly add into flour mixture. Mix until it resembles dough and can be formed into a ball. If it is too dry add 1 tbsp of milk. Cover and set in fridge for 20 minutes.
  3. Preheat oven to 350F. Line a sheet pan with parchment paper or a Silpat.
  4. Roll dough into ¼ inch thickness. Using a cookie cutter of your choice, cut cookies. Repeat step until all the dough has been used.
  5. Bake for 5 minutes until slightly brown. Let cool before serving. Enjoy!
