
These Vegan Gingerbread Cookies are soft on the inside and slightly crunchy on the outside. They are very easy to make and you can form them into whatever shape you want. They are the perfect festive cookies.


Although December has not hit us yet, I am super excited for cookie season. One of my favorite holiday cookies every year is making gingerbread cookies. There is something so special about them, perhaps, the smell of molasses and cinnamon spice together, or even having them with a cup of hot cocoa.


I made these Gingerbread Cookies vegan and gluten-free. They require very minimal ingredients to make and it’ll be the perfect treat to have for kids and as gifts. Here is what you will need to make these Easy Vegan Gingerbread Cookies:

-coconut oil
-dairy-free milk
-cinnamon
-cardamom
-ground ginger
-organic powdered sugar
-baking powder

These Vegan Gingerbread Cookies are soft on the inside and slightly crunchy on the outside. They are very easy to make and you can form them into whatever shape you want. They are the perfect festive cookies.
Ingredients
-1 ⅓ cup gluten-free flour
-3 tbsp molasses
-3 tbsp coconut oil, melted
-5 tbsp dairy-free milk (I used unsweetened cashew milk)
-1 tsp cinnamon
-½ tsp cardamom
-½ tsp ground ginger
-1 cup organic powdered sugar
-½ tsp baking powder
Instructions
- In a bowl, combine flour, cinnamon, cardamom, ginger, powdered sugar, and baking powder together.
- In a separate bowl, combine molasses, coconut oil, and milk together. Slowly add into flour mixture. Mix until it resembles dough and can be formed into a ball. If it is too dry add 1 tbsp of milk. Cover and set in fridge for 20 minutes.
- Preheat oven to 350F. Line a sheet pan with parchment paper or a Silpat.
- Roll dough into ¼ inch thickness. Using a cookie cutter of your choice, cut cookies. Repeat step until all the dough has been used.
- Bake for 5 minutes until slightly brown. Let cool before serving. Enjoy!
