-large Medjool dates
-creamy, unsalted peanut butter

These Healthy Gingerbread Cookie Balls requires minimal ingredients to make and are the perfect snack bites to have on hand. They are vegan, gluten-free, refined sugar-free and oil-free.
-1 ½ cup almond flour
-1 tbsp coconut flour
-¼ cup raw, unsalted cashews
-5 large dates, pitted
-5 tbsp creamy, unsalted peanut butter*
-1 ½ tbsp molasses
-1 tsp ground cinnamon
-½ tsp ground ginger
-½ tsp nutmeg
-¼ tsp ground cloves
- Add dates to a bowl of warm water, let it soak for 5 minutes.
- Add cashews, dates, peanut butter, and molasses into a food processor and blend until the pieces have broken apart.
- Add the remaining ingredients into a food processor and blend until smooth.
- Roll the batter into 1 ½ tbsp size balls. Repeat steps. Enjoy!
*can sub for any other nut butter
